Sorry if this was stated earlier and I missed it, but I am assuming that wooden ships can sink in FS?

Yes, if they're carrying heavy equipment. In FTD, wood is very buoyant and most equipment is only barely heavy enough to sink, while FS uses realistic material weights, so things should be very different.

Yes - propellers, via the new custom control surface system. There's a chance that not all the parts necessary to build viable airplanes will make the cut for the initial release of the game, but let's keep our fingers crossed. I'm guessing FTD-style simple jets won't be a thing, as they're not up to the fidelity of the rest of the equipment that's going to be in FS, but there's a chance that more realistic jet engines will be implemented in later versions.
